Hollee Eckman

Preserving Memories - Building Family Unity

When Hollee Eckman gave away jars of her old fashioned flavor, freshly made jam for Christmas in 1996, she didn’t realize it at the time, but created a market following. With more and more requests for jam, Holleeberrys started formal sales in 1999. Eleven different flavors have been created including boysenberry, strawberry-rhubarb and apricot-pineapple.

In February 2002, a $10,000 Utah microenterprise loan enabled Hollee to pursue a unique idea – the publishing and marketing of a combination cookbook and journal called “The Jam Journal”. The book not only includes recipes for appetizers, entrees, breads and desserts using jam, but has places to record family traditions and messages to children the book will eventually be passed to. Further, many of her recipes can also be found in “All that Jam” distributed by Deseret Bank Stores throughout the United States and Canada.

Since receiving the Utah Microenterprise loan in 2002, Holleeberrys has sold over 2,000 books and jam sales have tripled. Hollee has also recently developed two new types of jam. One is all natural and contains a sugar substitute called “Wheylow™”, low carbs and low calories. The second was developed for use by diabetics.
